Many small bakeries

At the builders' settlement, AERA documented hearths and depressions intended to hold bread pans with rounded bases. The experimental reconstruction proposes preheating the inverted molds, then placing them in the cavities, pouring the dough and covering them with another hot mold. Archaeological traces support this sequence as a working model. To increase production, domestic-scale facilities and containers were multiplied; It is not necessary to imagine a single gigantic bakery. The spatial organization shows how an everyday task could be expanded to supply a population concentrated by monumental construction.
